With everyone staying home these days due to the COVID-19 pandemic, many of my fellow food bloggers are baking more and more: breads, cakes, cookies, you name it. So much that there is a shortage of instant yeast. Many have taken the challenge to create their own active yeast starters, but I am not that experimental. And with today being Easter, I wanted to make something quick yet festive for the occasion, using whatever ingredients I already have in my pantry. Enter the Easy Cinnamon Rolls. With no yeast, proofing, or kneading necessary, I just had to share the recipe on What Micky Eats...At Home.

I wanted to bring some muffins into work, as we were celebrating another birthday in the office and we all decided to bring in things for our "morning meeting" (read: surprise birthday party!). So I made Lemon Blueberry Muffins. These are a variation of the other breakfast muffins that I made in the past for another birthday celebration and were such a hit. I am a fan of muffins for breakfast. Especially if the recipe is easy peasy such as 1) dump ingredients into a bowl, 2) mix, 3) bake, and 4) eat. No electric stand mixer required. No intricate frosting or toppings needed. I've made morning muffins before, and decided to use up some old apples we had this time for What Micky Eats...At Home. These Apple Cinnamon Muffins whip up in a flash, and are topped with an extra oomph of cinnamon sugar mixture to bring out that classic combination. A strata is a savory brunch/breakfast casserole that is layered with bread and other fillings. Like with bread puddings, it's always good to use any stale bread you have on hand. With the holidays wrapping up, I still was feeling a bit lazy and thought a quick breakfast casserole would be easy to throw together using whatever I had on hand in the refrigerator. We had a lovely Spanish meat and cheese platter with pan con tomate for New Year's Eve. Do you remember those individually packaged fruit hand pies from 7-11? They were a favorite snack for me as a child during road trips and got me through many early morning classes during college. Yet, they are loaded with tons of sugar and extra preservatives that give them a long shelf-life. After picking up some beautiful fruit at Eastern Market the other day, I decided to make my own little Fruit Hand Pies for breakfast. I made two kinds: strawberry and apple-cinnamon. At Home: Cranberry Nut Bread
One of my favorite snacks is dried cranberries. These tart cousins to the common raisin are a staple in my cupboard. They are great to add to cereal or oatmeal in the morning, sprinkle on salads, mix with nuts as a snack to keep at my desk, or to add into classic holiday dishes like stuffing. I wanted to use them in a Cranberry Nut Bread recipe that I found and feature here on What Micky Eats...At Home.

A couple of weeks ago, I won a giveaway hosted by the lovely and fashionable Dana. I received her friend's new cookbook based on her blog Small Indulgences.
