At Home: Mini Spanakopita Cups

With the holiday season comes many parties that involve wine, hors d'oeuvres, and good company.  If you are hosting, it can be overwhelming to buy and prepare all the food in order to make your party festive, while still entertaining and mingling with guests.  Next on What Micky Eats...At Home, I share a simple finger food appetizer that can be whipped up easily for your next get together. Check out these Mini Spanakopita Cups for a fun Greek bite to add to your party menu.

Mini Spanakopita Cups (Makes 15)
  • 4 cups frozen spinach, thawed and drained
  • 3 cups feta cheese
  • 1 egg
  • 1 garlic clove, minced
  • ½ teasp dill
  • salt & pepper, to taste
  • 1 box mini pastry shells 


- Preheat oven to 350 degrees (or follow directions of pastry shell box).
- Mix egg, garlic, dill, salt & pepper.
- Add in feta cheese and mix thoroughly.
- Add in spinach.
- Fill each mini pastry shell with spinach mixture and arrange filled shells on baking sheet.
- Bake for 5 to 8 minutes (or follow directions of pastry shell box).
