At Home: Corn Pudding

I love all the sides that come with Thanksgiving dinner: stuffing, mashed potatoes with gravy, sweet potatoes, cranberry sauce, sweet corn, and various fall vegetables.  My grandmother, Lea, makes a decadent sweet corn dish that combines the necessary vegetable with starch to make a classic comfort food dish.  This next installment of What Micky Eats...At Home features Grandma Lea's Corn Pudding.


Grandma Lea's Corn Pudding
  • 1 egg
  • 1 stick butter, melted
  • 1 cup sour cream
  • 1 can whole kernel corn, drained
  • 1 can creamed corn
  • 1 box Jiffy corn muffin mix

 - Preheat oven to 350 degrees.
- Mix all ingredients in a large baking dish, and bake uncovered for 1 hour.


This dish is so easy to make.  It is like a really soft corn bread, since it has the extra creamed corned in it.  The top should be slightly golden brown when ready.  Try this corn pudding as a side on your Thanksgiving table this year!
