Restaurant Daalder

Restaurant Daalder located in the Jordaan District of Amsterdam is lead by Chef Dennis Huwaë, who left a two-star Michelin restaurant in 2016 to co-own and work on this new venture. Diners can choose a 5 or 7-course chef’s menu or the 'Daalder Menu' which includes the 7-course menu & supplement of caviar with 7 matching wines, water, and coffee or tea with homemade petite fours for 160€. We decided to go all the way with the Daalder menu and be pampered from start to finish.


We started with an amuse bouche of salmon tartar and fish tacos - both bites exploded with bright flavors and spices that really excited us for the meal to follow.



 Next, as a digestive, we were presented kombucha with a bite of sushi.
 


Our first course was a North Sea Crab salad with camomile, Granny Smith apple, and kumbawa. It was paired with one of the many white wines we had during the night.



The next course was a trio of preparation of Pumpkin with foie gras, Union 55, and eel.  This dish was fun and flavorful. 



The Egg dish came with mushrooms, cep, focaccia crumbles, and Sambuca. It was very creamy and was paired with a strong sherry.




The Langoustine dish came with overpowering broccoli, onion, and nori vert.  Our menu came with the supplemental bite of caviar that was briny and crunchy in the little bed of lettuce.



The vegetarian Lasagna was made with celeriac, Pecorino, and Amalfi lemon.  It was not my favorite dish of the night, but was paired with a classic Italian chianti.  I think the name and wine pairing called for tomato sauce that was simple non-existent in this dish.





Keith ate the Roasted Duck with cherries paired with a Gamay, while I enjoyed a substitute of fish with apple and fennel slaw and mashed potatoes.


Dessert this evening included a new creation with a frozen lemon cake in the shape of a corn stalk. There were great citrus flavors in this dish that was highlighted by the accompanying housemade whisky sour.


Then we had the famous Dutch cookie called a Stroopwafel that was stuffed with caramel ice cream.  It was sweet and delicious!


We finished with chocolates in the shape of Nespresso cups and some freshly baked madeleines.
All in all we had a great meal at Daalder.  It was just as good, if not better, than other Michelin-starred dinners we've had.
