We spent the day at Sugar Beach, and enjoyed snorkeling in the clear water, relaxing in the sun, and soaking up the amazing views of the Pitons. We took a break from the sun and had lunch at the Bayside Restaurant. Though we were not guests of the Viceroy Resort, it was not an issue and we were seated at a lovely table where I could feel the tropical breeze and watch the private boats come in.
I was hungry, but wanted something light so I decided on the Vegetarian Sandwich. It was a large portion on grilled bread stuffed with grilled eggplant, red peppers, tomato, and mozzarella. A small bag of fries and lightly pickled beet and carrot salad accompanied my sandwich. The sandwich was tasty and filled me up. Keith ordered a bowl of Gazpacho to start. The chilled tomato soup was bright and zingy with chunks of seafood (shrimp and crab?). He also ordered a Caribbean specialty - Fish Roti. This wrap is customarily stuffed with a savory curried stew-like filling and is very popular throughout the West Indies. Keith really enjoyed the fish and potatoes that were in his version.
