At Home: Bison Sliders with Bacon & Onion Straws

Keith decided to make Bison Sliders with Bacon & Onion Straws to represent the city for our Super Bowl menu.  Bison meat is much leaner than regular beef, so he indulged with bacon and cheese.  Check out the other Super Bowl Snacks that we made and find the recipe on What Micky Eats...At Home.

Bison Sliders with Bacon & Onion Straws (Makes 4)
  • 10 oz. ground bison
  • 1 Tbsp Worcestershire sauce
  • salt and pepper, to taste
  • garlic powder
  • ½ onion, sliced thin
  • flour
  • vegetable oil
  • pepper jack cheese
  • 4 slices bacon, cooked
  • 4 slider buns
  • ketchup, optional

- Shape bison meat into 4 patties, about ¾-inch thick. Indent middle of each patty with your thumb, so they stay flat to cook evenly on the grill.
- Season both sides with Worcestershire, garlic powder, salt and pepper, and place on grill to cook for 2 - 4 minutes, or until a lightly charred crust begins to form.
- Flip and cook other side for another 2 - 4 minutes, or until they reach your desired level of doneness.

- While the burgers cook, dredge onion slices in flour seasoned with salt and pepper.
- Heat vegetable oil in a skillet set over high heat. Once oil is hot, add the onions until fried golden brown.
- Drain onion straws on paper towel-line plate.
- Toast buns on the grill.
- Add cheese to each burger about 1 minute before they are done.
- To serve, place burger on bottom of each slider bun. Top with bacon and the onion straws.
- Add ketchup to the top half of the bun (if desired), and place on top of burger.
