Nimblefish

 Nimblefish is a warm, cozy Japanese spot for nigiri-focused sushi plus sake, wine, beer & whiskey located in Portland, Oregon. Led by chef Cody Auger, most of the sushi is flown in directly from Japan and is celebrated for its simplicity.  We enjoyed the Omakase menu, priced at $75 per person, where the chef-selected tour featured seasonal highlights among house standards.



We were seated at the chef's counter where we had intimate interaction with the chef.  We were first served with a starter of fresh sashimi and a green salad to open the palette, and then sat back and relaxed as we watched the chef prepare each piece by hand.

We then had a progression of 11 pieces of nigiri.  Too many to name, but our favorites included the Akami from Nagasaki, Ma Dai from Ehime, Murasaki Uni from Hokkaido, Anago from Korea and the Toro from Nagasaki. 

We loved the fresh fish so much that we ordered a few extra pieces: Kanpachi from Kona, HI, Chu Toro from Nagasaki, and Tamago.

After, we ended with miso soup which is traditional in Japan.  This soup was the most flavorful miso - rich with soy and umami - studded with fresh pieces of tofu.


Lastly, for dessert we were treated to a sorbet of mandarin, yuzu, and calamansi - a Filipino lime - to give a bright citrus closure to our wonderful meal.
