As a first bite, we started with a tartlet filled with tartare. It was bright and really awakened my palate. It was paired with a sparkling wine, which really set the mood off right.
Next, we ate LIGNJA - poached and smoked squid in a garlic cream with summer peaches. The contradiction of salty and sweet worked in this dish, and paired perfectly with a glass of rose.
Smoked fish had a weird texture - soft, yet firm, and almost gummy like. Topped with bee pollen, these fish bites were tasty, but three pieces were plenty.
The TUNA dish was actually tuna tartare with tomato, capers and lemon jam, topped with grated dehydrated egg yolk. It was a fun interpretive dish.
CANNOLO - potato cannoli filled with fish rillette was a very clean bite.
Next, we were presented with house kombucha to pair with the following dish called MOL. Poached hake fish, cuttlefish noodles, pickled egg, and spring onion were served in fish broth, giving a ramen-type vibe. This dish was very light and would have been better if the broth was a bit warmer.
I was skeptical of the next dish RAZA - baked skate fish with sunchoke, black garlic, and fig leaf. I am typically not a fan of skate, but this one was tender and melted like butter. The black garlic was key.
Lastly, we finished with dessert. ČOKOLADA - handmade chocolate cake served with salt and a glass of whiskey. It was a classic pairing and a nice ending to our seafood meal.
