Para di Soto

Para di Soto is named for the ancient Roman Imperial baths that this building used to house back in the 4th century. The restaurant enriches the ground floor of Hotel Slavija, the oldest hotel with a beating heart inside the palace. The intention was to create a magical symbiosis of ancient times and modern interior featuring minimalism design to express true value and beauty of centuries behind us. With respect to Roman legacy, some of the archeological remains are still visible inside the premises. The restaurant serves Mediterranean and classic Dalmatian cuisine.

We dined here for our last dinner in Split.  Again, we arrived fairly early so were seated in the main dining room all to ourselves.  We could see some of the ancient architecture preserved.  We ordered a bottle of 2018 Babić Mali T - a bold red wine with notes of sour cherry and fig. Related to the Plavac Mali, it was a bit more tannic and not my favorite of the two.

As a starter, we shared the famous Black Cuttlefish Risotto.  The rice was cooked perfectly and had lots of salinity and cuttlefish flavor. It was very tasty.

As his main, Keith ordered the traditional Dalmatian Pasticada - baby beef cooked in red wine and root vegetable sauce served with large gnocchi.  It was a hearty stew-like dish that was filling.

I ordered the Squid in white wine sauce, served with Mediterranean polenta.  The little baby squid were cute and very tender.  But there were so many! I could not finish the dish.  The polenta was strange as it was dry, cold, and I did not like the seasoning of the vegetables studded in it.

We were happy to have tried some authentic Dalmatian fare, but perhaps it was the dishes we picked but these fell short.  Nevertheless the history of the building itself was cool and we had a nice romantic evening together.
