This next installment of What Micky Eats...At Home features a twist on the famous 'lasagna-style' enchiladas that I've made before. Instead of layering tortillas with goodies into a casserole dish, I filled each tortilla individually and rolled them up before baking. These Chicken, Cheese, & Bean Enchiladas were approved by my father recently, so I was pleased to have made another successful dish to satisfy that Mexican craving.

At Home: Chicken & Cheese Enchiladas
This next installment of What Micky Eats...At Home features the first "homemade" dish I ever learned to make: Chicken & Cheese Enchiladas. It was sophomore year of college and my roommate and best friend, Lucinda, did much of the cooking in our humble Los Angeles apartment. I have committed this recipe to memory and bust it out only for "special occasions", as it looks much fancier and harder to accomplish than it really is, but does take time to prepare. It remains one of my dad's and Keith's favorite meals that I make.

I was in San Diego for work and went to dinner here for a casual business meeting. The spot was cute with lots of local charm. I mistakenly ordered a sangria instead of a margarita, but it was still good. Despite being busy, service was pretty decent. The chips and fresh salsa and queso were very tasty!
